Description
These olives were hand picked when they were at full ripeness and placed into cotton bags full of salt. The olives are completely covered and are hung in a shed for up to 3 – 4 months. The salt extracts the bitter liquid from the olives; this is an old traditional method I came across. When they look like your kids wrinkly fingers from being in the bath too long, they are washed, coated in our beautiful extra virgin olive oil and sealed ready for everyone to enjoy. These are ideal for platters or to just simply snack on.
